My Hope For Today

Saturday, August 27, 2011

Feeling a little blue as I head back to regular life today, but I am thankful for Jesus who gives me hope for the future. It's what's making me strong today.

"For I know the plans I have for you, declares the Lord, plans for wholeness and not for evil, to give you a future and a hope. Then you will call upon me and come and pray to me, and I will hear you. You will seek me and find me. When you seek me with all your heart, I will be found by you, declares the Lord, and I will restore your fortunes and gather you from all the nations and all the places where I have driven you, declares the Lord, and I will bring you back to the place from which I sent you into exile."
Jeremiah 29:11-14.

We'll be reunited again :)

Small Town Reflections

Wednesday, August 24, 2011

Whenever I come home, I get in a reflective mood. I think it is because Idaho seems to go at a much slower pace than California and there is more space for thinking. I realize how much I miss the small town atmosphere. I love seeing my stepdad talk to the mailman about his life or seeing the precious little neighbor man come over to help with building projects. It's all so friendly and welcoming. It had a big part in shaping who I am and now that I have lived away from it, I appericate it so much more.

I got to spend the day with my great grandma, grandma, and sister. We went out to lunch at the local cafe which is the best place in town according to my precious great grandma.

Me, Great Grandma & Gram

My Great Grandad just passed away this February, he was well into his 90's but so active it was a bit of a shock. He and my Great Grandma have been married for over 50 years. They were the most precious couple and my sister asked her what the foundation for love is. She said, "Patience and understanding....not one is better than the other and not one knows more than the other. Both are equal." Pretty good advice that I am going to try to follow in my own marriage. She is a great inspiration to me, especially in marriage. I am so thankful that I got to grow up with all my grandparents. I love them dearly and hope to glean some wisdom from them.

Tater Tot Casserole: It's what's for dinner.

Monday, August 22, 2011

This week, I am visiting my family in Idaho and it is so nice to be home. It's a really small town and there is not much to do there. My sister and I attempted to find t-shirts to make skirts from but the ONE thrift store in town didn't have much selection. I did find a cute button-up Forever 21 shirt for 50 cents! I love thrift store shopping.

Later, we decided to cook dinner for our family. We picked out a recipe on Pinterest.com ....Tater Tot Casserole.

In its simpliest form it only takes four ingredients: ground beef, cream of chicken soup, tater tots, and cheese and takes about 35 minutes to bake.

It is a really simple and delicious recipe, you can find it here: http://cravingcomfort.blogspot.com/2010/01/tater-tot-casserole.html

I had my family be food critics to rate the deliciousness of this recipe on a scale from 1 to 5, 5 being the best.

Mom: 4.0
Mel (my sister): 4.0
George (my stepdad): 4.5, but he said it would've been a 5 if it had onions.

My opinion is that it could use some spicing up with some taco seasoning in the meat or pepper jack cheese. I think that could be a good recipe to experiment with. Let me know any suggestions you might have!
