How I Spent My Sweetest Day....

Remember that post that I talked about baking something sweet? (Here, if you don't remember) Well....I actually didn't make anything that tasted sweet but we made a sweet (as in awesome) pizza!

We kinda have an obsession with making pizza. It all started when we were dating. We wanted to make dinner together one night and I happened to have this box of pizza crust mix in my pantry....we were hooked!



This is the very first pizza we made together...we were so precious that we made it into a heart, haha.
Super back in the daaaay.


On to the present....so I thought it would be nice to make a pizza together. It was also because I was reading this awesome blog called Life Blessons that had some pretty good pizza how-to's on the dough, sauce, and seasonings.

First, we had to make the dough. The recipe on Life Blessons called for a bread maker and I got really sad because I thought we didn't have one....then! My husband reminded me that we did in fact have a bread maker and it was like Christmas morning for me! :)



We followed the directions on here. We changed around the ingredients a little bit though. 

We used:
- 2 c. white flour 
- 1 c. wheat flour
- a good heaping scoop of wheat bran (it's REAL healthy)

and then we followed the rest of the ingredients/ directions for the bread maker. It took about 45 minutes for the dough to rise.

Next, the husband formed the dough into the pizza crust. He's pretty much a pro because he worked in a pizza shop for a long time. 




After the crust was formed, we set the oven to 350 degrees and got the sauce and toppings ready. We used the sauce recipe from Life Blessons as well...and let me tell you, this sauce is the best sauce in the ENTIRE world. I could eat it plain. I am not joking either. 




For our toppings we chose garlic chicken, Parmesan cheese, cheddar cheese, feta cheese and olives. Kinda random but we were just grabbing what was in our pantry. 




We baked it until the crust was golden brown and it was super tasty! We actually ate the whole pizza for dinner :)




It had been long a day for both of us if you can't tell from our tired faces, but the pizza quickly restored our energy. It was an excellent choice for our date night :)

Day 12: Using Food! (Spreading Kindness)

Well here we are at Day 12...almost halfway there! Do you feel kinder yet? To tell you the truth, these little ways of spreading kindness are challenging me in my life.

Anyway...do you know someone who is going through a rough time in their life? Perhaps losing someone they love or they are stressed at work?

Make a delicious meal for them and bring it over to their house or invite them over to your house. You could even try some of the recipes on my recipe tab! They are quite delicious. Or check out Pinterest...I don't know what I'd do without that amazing little website!

If you are not very good in the cooking department, take them out to dinner. Either way, it'll show them some love.


Here's one of my favorite things to make: Chicken Nachos.

Chicken Nachos Recipe

-Juanita's tortilla chips (They are THE best!)
-Can of re-fried beans 
- LOTS of shredded cheddar cheese
-can of chopped black olives
-shredded cooked seasoned chicken (I usually cook mine in a pan with olive oil and chipotle chili powder)

Set the oven at 350 degrees. Then put a even layer of tortilla chips on a baking sheet. 
Cook up the re-fried beans until boiling and place on top of the chips. Then add the chicken and cheese. Top off with the black olives. Put the yummy goodness into the oven! Take out with the cheese is completely melted...usually about 5-6 minutes. 

Take out and eat it up! :)

So...basically I have been very bad at keeping up with my blog so far. I just started a full-time job and things are a little busy, but I'll figure it out! I want to catch you up on what I have been doing for the past few weeks...except I want to do it by showing you my delightful food adventures....here we go:

First up: Oreo Cream Cheese Cupcakes


These received 4.5 out of 5...very delicious :)

Next, my husband and I tried our hand at Tofu....let's just say it was an experience. 


It comes in a goopy flavorless square, so it's key to season it well.

Next, we made Whole Wheat Oatmeal Raisin Bran Muffins.


Very healthy...too healthy for me but my husband loves them! 

So later, I had a chocolate craving....and I made Nutella Peanut Butter Cookies.


They are actually semi-healthy and really delicious. 
They taste like those chocolate peanut butter no-bake cookies!

Next up is an invention of my very own: Chicken Nachos :)


Super delicious if I do say so myself. 

Last but not least, I made Twice Baked Potatoes 
and Artichoke Dip with bread pieces 
for the lovely ladies of Evangel Home.


This meal was a big hit with the ladies :)

So...that's mainly what I've been up to, trying to figure out some good recipes to keep my husband's stomach happy! So far so good. Check out the recipes tab for the sites where I found these recipes and also for the little twists that I added to them.

UPDATE!

Here are all my little touches:


Oreo Cupcakes:

-I didn't use the sour cream or salt....I don't like sour cream at all!!

Tofu: 

-I put this tofu in a salad, pretty good but we definitely needed more flavor.

Whole Wheat Oatmeal Raisin Muffins:

-We didn't put in the nuts in this recipe, but we should have. You definitely need lots of berries & nuts or it tastes bland.

Nutella Peanut Butter Cookies: 

This recipe was actually just for nutella, but we spilt the 1 cup nutella needed. We used 1/2 cup nutella and 1/2 cup crunchy peanut butter. We also just whole wheat flour (3/4 c. instead of 1 full cup of flour) and added wheat bran for some fiber. These were very delicious and semi-healthy so I feel pretty guilt-free about these.

Chicken Nachos:

This is actually my own invention :) ....I will have to share more later.

Artichoke Dip:

-I pretty much followed this recipe but I used Parmesan cheese to top the dip and mixed some with the rest of the ingredients as well.

Twice Baked Potatoes:

I used this basic recipe without the pesto...I love pesto but didn't have any unfortunately! I love twice baked potatoes because they are so versatile, you can add whatever you want in them. I added pepper, milk, Parmesan cheese, and butter. It turned out delicious!




Tater Tot Casserole: It's what's for dinner.

This week, I am visiting my family in Idaho and it is so nice to be home. It's a really small town and there is not much to do there. My sister and I attempted to find t-shirts to make skirts from but the ONE thrift store in town didn't have much selection. I did find a cute button-up Forever 21 shirt for 50 cents! I love thrift store shopping.

Later, we decided to cook dinner for our family. We picked out a recipe on Pinterest.com ....Tater Tot Casserole.

In its simpliest form it only takes four ingredients: ground beef, cream of chicken soup, tater tots, and cheese and takes about 35 minutes to bake.

I had my family be food critics to rate the deliciousness of this recipe on a scale from 1 to 5, 5 being the best.

Mom: 4.0
Mel (my sister): 4.0
George (my stepdad): 4.5, but he said it would've been a 5 if it had onions.

My opinion is that it could use some spicing up with some taco seasoning in the meat or pepper jack cheese. I think that could be a good recipe to experiment with. Let me know any suggestions you might have!
